Baking Day

I have just recently found out that my son has mild ADHD and Autism, and before I even think about medication to help him I have decided to change his diet to see if I can notice any differences. One of the things I have read and been told my numerous people who specialise in nutrition for children is that children on the autism spectrum don't process gluten well as it forms opioids in their brains making the bread addictive. If I hadn't seen the almost withdrawal like symptoms and how upset my son has been sometimes because he really wanted a bit of bread I don't think that I would believe bread could be addictive.
This leads me to something I absolutely love doing and that is experimenting with recipes, making something that isn't all that healthy turn into a healthier version (the same as I love doing with people, helping to turn them into healthier versions of themselves) So today I have made some gluten free choc chip muffins and some gluten free bread, because if he is going to eat bread I figured the least I could do was find him a better version to help his little brain.
I am always weary of trying out gluten free recipes, I have made a couple of different breads in the past but none have turned out good enough for my Mr 8 to replace his good ol white bread, so fingers crossed he will like this one. I will give an update at the bottom of the blog once he has tried it to see if it pasts the test, the last 4 have been a big thumbs down.

One of my goals this year is to move away from sugar filled breakfast cereals and getting my whole family eating more nutritious whole foods, so watch out for some delicious healthy breakfast ideas coming in the next week or so! We have been having smoothies for breakfast instead of packaged cereals like Nutrigrain and Milo, just starting off with basics and slowly moving them away from cereals. I still have them in the cupboard but have mad a promise to myself that once the containers are empty that will be it, no more sugar disguised as food for breakfast.
My other goal is to get away from a 'white lunchbox' it wasn't until late last year getting close to finishing my nutrition cert and realising the food in my boys lunch box's weren't all that great and they were pretty white ... White bread, white yogurt, white crackers, white rice cakes ect it wasn't that exact combination each day but there was never much colour there. So I thought that by giving them a homemade lunch everyday I was doing a pretty good job, but what I was really unintentially doing was depriving them of a lot of nutrients. At the moment they are still having their sandwiches but I am slowly changing their snacks to more nutritious ones and then I will slowly start alternating with days of no bread and lots of colourful foods.
