My Gluten Experience

By now almost everyone has heard of gluten . . . gluten free, gluten good, gluten bad, gluten everything!
I have never looked much into a Gluten Free Diet or the effects of gluten, sensitivities and intolerances, until recently! I have just over the last couple of days had an 'A-ha' moment realising the different feeling of what must be gluten in my body.
The weather was a little cold the other day, so for lunch I decided instead of a salad that would continue to build the icicles on my insides, I would have a chicken salad toastie (which was delicious by the way) I have come to realise the consequences of me having bread for lunch, not much work seems to get done afterwards. Once it has all started to digest, I feel tired with major brain fog, my stomach feels like it increases to how I felt at 9months pregnant, sloth mode continues to grow and before I know it I am back in the kitchen making a coffee to try turn this sloth into productive mode and wake my brain up!
So I was really surprised to find that after my gluten free toastie, I felt fine! Ready to tackle some more things on my Never-Ending To-Do List, the work I managed to continue with amazed me. I was super excited that I had my toastie and didn't want to crawl under my desk and sleep. At this stage I hadn't made the connection between the non-sloth mode and my toastie.

The next day, because that toastie was so delicious and my taste buds were screaming for another one, I decided to have it again for lunch. This time I had no gluten free bread left so used plain old white bread . . . WOW! Is what I was thinking afterwards, what on earth did I put in that? Sleeping tablets? Because here comes the sloth, s-l-o-w-l-y creeping into my brain!
That's when . . . A-HA OMG WTF *faceplam* #gluten - my brain managed to get these in just before the sloth took over!
Little bits of a puzzle started to fall into place, the reason why I had pins and needles/tingling in my fingers and toes all day Sunday last week (we had a massive binge on pizza Saturday night *facepalm again*) The same reason why no matter how much water I drank, I felt like I was almost hungover when there was no alcohol involved!
I think this may be the beginning of me eliminating gluten or least keeping it to a minimum! The other thing I have just recently found out is how gluten can effect the brains of people with other health issues like me son who has mild ADHD and Autism.
