Veggies are healthy so I can eat as many as I like

Have you been guilty of saying something like that?
I know I sure have! You exercise, eat all the healthy fruits & veggies, do your best to stay away from processed foods then comes time for your weekly weigh in/check in and find yourself saying...
" Damn scales/measurements just wont go down, why am I not losing weight?"
As much as we all try to avoid having to count calories to lose weight, it really does come down to calories in vs calories out.
If you want to lose weight, you need to eat less than you burn.
I know I know, easier said than done right?
For those of us who have tried a tonne of diets and have to many mixed up 'truths' about the quantity of foods we can eat to lose weight, I think it was either Jenny Craig or Weight Watchers who have said that (some) vegetables are free foods, so eat as many as you like.
Which can be very misleading and don't get me wrong, it is great to eat lots of veg, but just like all other foods we need to be mindful about the amount and type we are eating.
The most important thing to remember when creating your meal masterpieces is to eat the rainbow! Pick different colors and textures, then when you are putting all that deliciousness on your plate remember to use the hand guide to help with the quantities.
Here is an example of how I have learnt from Precision Nutrition to teach you to use your hands as your measuring cups:

This way, unless you are able to remove your hands, you will always have your 'measuring cups' with you and can easily keep on track when eating out. A lot of places will allow you to take a 'doggy bay' so you can have your leftovers for your next meal.
Another handy hint when it comes to vegetables, in our busy busy lives we often don't have the time to meal prep whole meals, or just need to throw together a meal for the family when we get home from work. So one of the things I used to do when I had my regular 9-5 type job was each week when I done our grocery shopping, before those veggies went into the fridge I would chop them all up ready to throw in the pot and cook.
I would pre-chop broccoli, cauliflower & slice cabbage put them all back into the bag I brought them in and into the fridge they went. This also helps with storage, being chopped up they don't take up as much room so fit in the veggie bin nicely! WIN-WIN!
If the thought of chopping veggies isn't appealing, then go for the frozen version. These are just as nutritious as their fresh selves - if not more sometimes! Next time you go shopping take a look at the frozen section, you will be amazed at the variety.
Need that little bit of extra help getting those veggies sorted? Here are some ways I might be able to help:
