Wholemeal Oat Muffins

Ingredients:
1 tsp Baking Powder
1 tsp Baking Soda
1 Cup Wholemeal Flour
1 Cup Rolled Oats
2 Eggs
¼ Cup Sugar – Brown, Raw or Coconut
¼ Cup Honey or Maple Syrup
1 Cup Unsweetened Greek Yoghurt
1/3 Cup Oil – Canola, Rice Bran, Soy Bean or Coconut
1 tsp Vanilla Essence
Optional Extras:
¼ tsp Cinnamon
¾ Cup Sultana’s
2 Cups Peeled Diced Apples
¾ Cup Dried Fruit & Nuts
Instructions:
· Preheat oven to 180 0c
· Line & grease a 12-hole muffin tin
· Add all dry ingredients to a bowl mixing thoroughly
· In another bowl, beat eggs, sugar, vanilla and honey/maple syrup together
· Add wet mixture to dry, fold until just combined
· Add even amounts to muffin tin
· Bake for 20-25mins
· Enjoy!
